-Solid experience (4yrs) in classical and modern progressive cuisine, preferably under notable chefs or in notable establishments -Protein / Fish Butchery Skills -Menu development & experience sourcing local products from local suppliers -The desire to at first learn, then uphold and improve upon the cuisine that makes us successful -The desire to own the creative direction, cleanliness, and flow of the kitchen -Communication skills!
